White Chicken Chili

With the cooler temperatures on the horizon it makes me want to curl up on the couch in my UGG boots, scarf and a bowl of the BEST White Chicken Chili I've ever had. 

My dear friend Courtney brought it to one of our football Sundays and I have been making it ever since. It's simple and fool proof, all ingredients go into a crock pot and 8-10 hours later you've got chili! Did I mention it's healthy too? It's not paleo by any means, but sometimes you just have to say... I need chili! 

White Chicken Chili 

Ingredients: 

  • 1 1/4 lbs boneless skinless chicken

  • 2 (15 ounce) cans great northern beans 

  • 1 (15 ounce) can white corn

  • 1 (1 1/4 ounce) envelope taco seasoning

  • 1 (4 1/2 ounce) can of chopped green chilies

  • 1 (10 3/4 ounce) can condensed cream of chicken soup

  • 1 (14 ounce) can chicken broth

  • 1/2 cup sour cream

  • monterey jack cheese (optional)

  1. Place chicken in a slow cooker/crock pot. 
  2. Top with beans and chicken
  3. In a medium bowl combine taco seasoning, green chilies, cream of chicken soup and chicken broth. 
  4. Poor mixture over chicken
  5. Cover and cook on low for 8-10 hours
  6. Before serving remove chicken to shred, throw back in with sour cream and let sit for 5-10 minutes 
  7. Serve topped with green onions, cheese, sour cream or whatever toppings you'd like

This is a hit at every pot luck event or football party! Seriously can't go wrong with it! :)
